Flavor: What does the bread or pastry taste like? Are the fillings or toppings well-balanced, or does one element (sweetness, saltiness, cheese, floss, etc.) overpower the rest?
Texture: Is the bread soft and pillowy or dense and tough? If there's a crust or toasted top, does it add the right chew or crispness? Do fillings add a good contrast (creamy, crunchy, gooey), or do they work against the bread?
WYBI (Would You Buy It?): How much did you enjoy the bread? Would you order it again or specifically seek it out on your next BreadTalk run? If faced with a full tray of breads, would this be one you'd reach for first?
Fine Print
The Lineup: We tested 16 breads from our local BreadTalk branch, focusing on items you'll find in Metro Manila stores. We did not include seasonal or limited-run items.
Why We're Doing This: Half the fun of a BreadTalk run is grabbing your own tray and tongs, working your way down a lineup that's about 60 breads deep. Most of us stick to the same two or three orders without ever trying the rest. We started strong with 16: the classics we grew up on, a few we'd always skipped, and some that hit differently as an adult (looking at you, Pork Floss). Count on seconds, thirds, and however many more rounds it takes until we've been through the entire lineup.
How We Tasted: All breads were purchased and tested the same morning to ensure freshness. Each bread was sampled as is, unheated, at room temperature.
How We Scored: Each bread was evaluated across 3 criteria. Final placements reflect the Pepper team's averaged impressions.
