Make Ate Rica’s Bacsilog for Your Next School (Or Office) Lunch

Ate Rica’s Bacsilog has saved budget-conscious students in Taft since 2006. We hacked their signature rice, bacon, egg, and cheese sauce combo. And we think our version deserves a passing grade.

Be right bacsilog.

The sauce is not actually sweet on its own, which is why you need to use honey-cured bacon for that signature Ate Rica’s sweetness. For the sake of authenticity, we suggest not fussing too much about the sunny-side up. The slightly burnt, dry yolk egg is part of the bacsilog experience, after all.

Ate Rica’s Bacsilog

  • Serves: 4 people

INGREDIENTS

Cheese Sauce

  • 1 ½ cups evaporated milk
  • ¾ cup white cheddar cheese
  • 2 tbsp. mayonnaise
  • 1 tbsp. knorr

Bacsilog

  • 12 strips bacon, chopped
  • 4 cups rice
  • 4 eggs, fried over-easy

INSTRUCTIONS

  1. For the cheese sauce, heat milk in a saucepan until warm.
  2. Add white cheddar, whisking in until completely melted.
  3. Remove from heat and add mayonnaise and knorr, and whisk until fully combined.
  4. Set aside.
  5. In a pan, add the bacon and cook for 5-8 minutes until cooked through but not crispy.
  6. To assemble, divide rice equally amongst four bowls.
  7. Top each bowl with fried egg, then bacon.
  8. Spoon over sauce and serve.
