Turn Your Love-Hate Relationship with Cheese Pimiento into Pure Love with This Two-Step Recipe

Everyone just loves to hate cheese pimiento. It’s not exactly what you’d want in a sandwich, and it’s not anyone’s first choice as an appetizer dip. But if it’s there, you’re probably not gonna say no to it, either. And when you start eating it, it’s somehow so hard to stop. (It’s probably all that cheese.) So we just went ahead and made you an easy-peasy two-step recipe to help you admit it’s pretty good.

Pimien-one, pimien-two.

Our version isn’t heavy on any one ingredient. (*coughs* There is such a thing as too much mayo. *coughs*) But at the same time, it’s loaded with everything you expect from a decent spread, including discernible chunks of pimiento. We think we found a good balance for any flavor-respecting millennial—sweet, salty, cheesy, plus a bonus kick of heat from the hot sauce. We honestly wouldn’t mind finishing a bag of chips with only this.

Pro-tip: Bottle these babies up, and give them away for Christmas. We’re sure your titos and titas will love them. Cue: “Uy, pwede na mag-asawa!” comments.

Pimiento Cheese

  • Serves: 4-6 people
  • Active time: 10 mins
  • Total time: 10 mins
  • Difficulty: Easy


  • 500g cheddar cheese, grated
  • ½ cup mayonnaise
  • 1 cup pimiento, finely chopped
  • 1 tbsp. hot sauce, optional
  • Salt and pepper, to taste


  1. Add all ingredients to a large bowl and mix until well combined.
  2. Serve as a sandwich filling or dip.​
