We’ve partnered with Quaker Oats to bring you an indulgent dessert that’s good for you too, because the supergrains contain iron, which help your immunity. Inspired by Chef Miko Aspiras’ Quaker Oats Cream Pie, we have a no-bake version that mimics the taste and texture of an extremely fudgy brownie, with Quaker Rolled Oats folded in the quick and easy batter. There’s a double dose of oats too, with Quaker Instant Oats (you can use Quaker Quick Cook Oats, too!) appearing in the filling, to make the cream extra thick and luxurious.
Quaker Oats No Bake Brownie Cream Pie
Serves: 1 dozen

Cream Cheese Filling
1/2 block cream cheese (4oz), softened
2 cups powdered sugar
1 tbsp milk, as needed
1/4 cup Quaker Instant Oats
No Bake Brownies
1 cup peanut butter
1/4 cup honey
1/2 cup Quaker Instant Oats
1 cup Quaker Rolled Oats
1/2 cup cocoa powder
1/2 cup mini chocolate chips, optional
In a bowl, add the peanut butter and honey and whisk until smooth.
Add the Quaker Instant and Quaker Rolled Oats, cocoa powder. and chocolate chips if using.
Fold in together until well combined, then scoop the mixture into flat circles by the tablespoon onto a tray.
Place the tray in the freezer for 15 minutes while you make the filling.
For the filling, whip together cream cheese, powdered sugar, and Quaker Instant Oats until smooth.
Add milk by the tbsp to thin out, if needed.
Remove the brownies from the freezer then flip half of the over.
Put a tablespoon of filling onto the flipped cookies, then sandwich with another cookie on the top to make sandwiches.
