These Pumpkin Beer Brownies Are Our Fall-Themed Answer to International Stout Day

With the rise of craft brewers in the country, Filipinos are enjoying a wider range of beer options. Though it’s hard to stray from pale ales and lagers, it’s nice to have something darker and maltier (such as stouts; Happy International Stout Day!) once in a while—especially if you can find ’em. If not for drinking, then definitely for cooking, as what we did for this fall-inspired recipe.

Fine, these pumpkin beer brownies are more pumpkin than they are beer. But we recommend making it if you happen to have a stray brownie mix in your pantry, and a few leftover bottles of brew in the fridge. That said, feel free to make your own brownies from scratch, too. The darker the beer you use, the deeper the flavor. That, with the subtle pumpkin flavor, you get an over-all not-so-sweet hearty dessert.

Instructions for Pumpkin Beer Brownies

  1. Preheat oven to 350F.
  2. In a large bowl, mix together brownie mix, oil, egg, and beer until well combined.
  3. Pour into an oiled 9×9 inch baking pan and set aside.
  4. In a separate bowl, mix together pumpkin puree, sugar, cinnamon, and nutmeg.
  5. Add the pumpkin mixture on top of the brownie mix in dots, then swirl with a knife.
  6. Bake the brownies for 30 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool slightly before slicing and serving.
