When she was 10, Aly Arellano‘s dad brought home a Kitchen Aid, prompting the aspiring baker to experiment on cupcakes and cookies. Coming from an entrepreneurial family, she started joining school fairs at the age of 17. She went under the name “Enchanted Desserts,” through which she sold “classical treats with a touch of whimsy.” Her love for food led her to culinary school; and when she graduated, she shifted her baking to focus exclusively on cookies.
I felt as if there wasn’t a cookie in Manila I was fully satisfied with, [one] that stayed moist and chewy a few days after it was baked. Granted, cookies are always yummy when fresh, but I actually find that my cookies taste better with time—or that’s what [some of my customers say].
So after two years of perfecting her cookie recipe, she re-branded to Aly’s Cookie Bar, starting with three flavors: Triple Chocolate Chunk, Bourbon Butterscotch Chunk, and Salted Caramel Chocolate Chip. She doesn’t scrimp on the ingredients, using French butter, Belgian chocolate, and imported vanilla on her cookies—which she bakes in the same Kitchen Aid that started it all.
The cookies are moist and chewy—even if you don’t reheat them. Heck, even straight out of the fridge, they’re good. And it’s true: the quality stays the same even after a few days. Although, it probably won’t take you that long to eat it all up. Hoard a couple of boxes in the next round of orders (or catch them at the next Spectrum Fair, which Aly organizes with her mom). Take it from us, one box isn’t enough.
