Make this with Only Four Ingredients: Spicy Shrimp with Avocado

I personally believe that Avocado is seriously underrated in the Philippines. When I ask most people “How do you enjoy eating Avocado?” they always reply with either guacamole or mashed with sugar and milk. I understand the uneasiness of toying around with Avocado, especially with its seasonal availability and varied usage. But Avocado is actually quite a versatile ingredient to have around. Its rich, creamy texture is perfect against crisp, refreshing salads with tangy vinaigrettes. Avocado also pairs well with shellfish, especially shrimp, as you will see in today’s recipe.

This simple Spicy Shrimp with Avocado is a play of both flavor and texture. Heck, we only used 4 ingredients to prepare it! For this recipe, we just used bottled Raspberry Vinaigrette, which you can buy in most groceries and supermarkets, and fired it up with a bit of Tabasco. The spicy zing of the dressing complements the supple texture of the shrimp (make sure to not overcook it, though!), and is finished off with a buttery avocado slice. It’s the perfect appetizer to welcome summer.

Spicy Shrimp with Avocado

Total Time: 20 minutes / Yield: 1-2 servings

Ingredients for the Shrimp and Avocado

  • 1 avocado, sliced
  • 10 shrimps, boiled, halved, and slightly seasoned with salt

Ingredients for the Dressing

  • 2-3 tbsp raspberry vinaigrette
  • 1/2 tsp Tabasco

Procedure

  1. Arrange the avocado slices on plate and top with shrimp.
  2. Drizzle with raspberry vinaigrette and Tabasco.
  3. Serve.

    Looks great! As a gal from Southern California I have had my fair share of avocados and always love the pairing with fish/shellfish. I am intrigued by the idea of avocado,milk, and sugar. Will be trying both out soon.
