Sometimes, changing traditional recipes don’t work, but in the case of this Spicy Honey Fried Chicken Macaroni Salad, it absolutely does. The idea behind this was to put a slightly Hawaiian twist, by adding chicken and pineapples to the salad, but using Korean elements, like crispy fried chicken that’s drizzled with spicy honey.

Spicy honey sounds like it might not work with something creamy, but the flavor of Lady’s Choice Real Mayonnaise works well with a bit of chili to cut the richness. Toss the chicken, carrots, pineapple, macaroni, and mayo all together, and you get a macaroni salad that has all the best parts of a Hawaiian pizza, with added crunchy chicken skin to add texture to the soft fruits and pasta.

  • Oil, for frying
  • 500g chicken thighs, cut into bite sized pieces
  • 1 tsp. salt
  • 2 tsp. hot sauce
  • 2 egg whites
  • 1 ½ cup rice flour
  • ½ cup Lady’s Choice Real Mayonnaise
  • 1 tbsp mustard
  • ½ tbsp. hot sauce
  • 2 cloves garlic, crushed
  • 1 cup ripe pineapple, diced
  • 1 cup carrot, shredded
  • Salt and pepper to taste
  • 500g macaroni, cooked and drained
  1. Preheat oil in a pot for frying.
  2. In a large bowl, add the chicken thighs, salt, hot sauce, and egg whites, tossing to coat.
  3. Add the rice flour and coat chicken using your hands until well covered.
  4. Shake off excess flour then fry the chicken until golden and crispy, 5-8 minutes.
  5. Remove from heat and drain on paper towels.
  6. Take half of the chicken and chop into small pieces.
  7. Set aside.
  8. In a large bowl, add the mayonnaise, mustard, hot sauce, and garlic and mix until well combined.
  9. Add the pineapple and carrot followed by the cooked macaroni.
  10. Stir all ingredients together carefully until well combined and coated.
  11. Season with salt and pepper then refrigerate for at least 30 minutes.
  12. Toss the chopped fried chicken into the mac salad, then serve cold on a large platter with the remaining fried chicken.
