It’s -Ber Months Already so Here’s a Customizable Slice and Bake Cookie Recipe for the Holidays

It’s officially -ber months. That means that, in the Philippines, it’s practically the holidays already. Set up the tree, get some name cards, and… bake some cookies. We’re giving you a head-start for this year’s festivities with this super simple base recipe. It’s great as giveaways for when those Christmas parties roll in. But here’s our proposal: make some to sell, and get some extra dough (get it?) for gifts later on.

We tested six different flavors to show you that you can be as creative as you want. Classic chocolate chip, white chocolate and cranberry, spicy hot chocolate—whatever. Heck, you can even have it plain if you’re into that; it tastes just like your typical shortbread cookie.

It’s also really easy to make. No more having to portion stuff up. You just have to slice it, and whatever you don’t want to bake, just stick it right back into the freezer. P.S. We’re open to gifts, too. Just send your cookies over. The more out-of-this-world the flavor, the higher you are in Santa’s “Good” list. Fact.

Slice and Bake Cookie Base Recipe

Instructions for Slice and Bake Cookie Base

  1. In the bowl of a stand mixer with a paddle attachment, beat the room temperature butter until light and fluffy on medium speed, about 4-5 minutes.
  2. Add the powdered sugar and beat for 1 minute until well combined.
  3. Add the egg yolks and vanilla extract, and continue mixing for 30 seconds.
  4. Add the flour and desired mix-ins to the butter mixture and beat until just combined, taking care not to overmix.
  5. Divide the cookie dough in half and roll each into logs about 2 inches in diameter, using plastic wrap.
  6. Wrap the logs and freeze for 2 hours at least.
  7. While the dough is freezing, line two baking sheets with parchment paper, and towards the end of the two hours, preheat your oven to 350F.
  8. After two hours, remove the cookie dough from the freezer and unwrap.
  9. Using a sharp knife, cut the logs into cookies about 1/3 of an inch thick.
  10. Place the cookies on the baking sheets, about 12 per sheet, and place in the preheated oven.
  11. Bake for 12 to 13 minutes, until the bottoms are a very light golden brown and the tops are set.
  12. Remove the cookies from the oven and let cool completely before serving.

Substitutions & Adjustments

  • Mix-ins should be chopped finely if possible, to make slicing the frozen cookie dough easier
  • Vanilla can be replaced with any extract or essence
  • To make a chocolate cookie base, replace 2 cups of flour with 1 ¾ cup flour + ¼ cup cocoa powder​
