Pizza Week: Ria Rigoroso’s Caesar Salad Pizza will Make You Eat Your Veggies

A self-professed part-time jerk, we know Ria Rigoroso likes trolling around, but working in the HR department of a local media giant makes us wonder if the trolling applies there, too. Aside from her busy job, she also juggles time for post-grad studies.

Ria basically put one and one together when she thought of her pizza idea. “There was a design for a Julius Caesar shaped knife holder floating around on my Facebook feed. I also happen to really like Caesar salad. So when I was thinking of a pizza idea and I saw it, it was like 1 + 1 = amazing,” she says.

For this pizza, we sort of bastardized the health component of salad by tossing in chunks of sautéed bacon along side some rich Caesar dressing. Of course, we didn’t forget the croutons and Romano cheese.

When it comes to her favorite pizza place in Metro Manila, Ria swears by Pizza Hut’s stuffed crust. Right now, she aims to be slayed by their 3-in-1 Cheese, Bacon, and Spinach Tuscani Pizza.

For someone who seems to be busy most of the day, Ria still has pockets of time to spare for her favorite hobbies that include playing video games, photography, writing, reading, and stuffing her face. Stuffing her face with what? She didn’t say. Let’s just assume it’s massive portions of food.

Ria likes to gobble up bread in all its pure glory. From whatever permutations it can possibly form, Ria is crazy over bread. Oh, pasta and cheesecake, too.

Ria Rigoroso’s Caesar Salad Pizza

Total Time: 20 minutes / Yield: 3-4 servings

Ingredients

  • 1/4 cup Caesar dressing
  • 1 1/2 cups shredded Romaine lettuce
  • 1/4 cup bacon chunks, sautéed
  • 1/3 cup croutons
  • 1/3 cup shaved Romano cheese
  • Tortilla

Procedure

  1. Bake tortilla for 3-4 minutes or until it puffs and is golden brown.
  2. Spread Caesar dressing on tortilla, leave the edges clean.
  3. Scatter shredded lettuce.
  4. Sprinkle bacon and croutons all over.
  5. Top with Romano cheese.
  6. Serve.

    Is there any caesar dressing that you can recommend? I’m pretty lost on what to pick since there are many choices available in the market.
