Spam musubi sounds and looks terribly intimidating, doesn’t it? When you see that neatly wrapped Hawaiian parcel, you’d never think you could make it at home. In reality, this recipe comes together so easily, especially if you have your can handy to form the musubi in!
Now that you know how simple it is to make at home, you can deviate from plain old flavors, and add spice and heat to this extremely snackable bite. Add kimchi to the rice, and make a decadent, spicy sriracha mayo to make it even better.
By adding sriracha (or any hot sauce like gochujang) to your Lady’s Choice Real Mayonnaise, you get a velvety dip that you can layer in between the rice and Spam, and have extra on the side for dipping.
Prepare the Spam: Heat oil in a pan over medium heat. Add Spam slices and fry until slightly browned, about 2-3 minutes per side. Remove from pan and set aside until cool enough to handle.
Prepare the rice: Heat oil in a pan over medium-high heat. Add the kimchi and cook until fragrant but not browned, about 3 minutes.
Increase heat to high and add the rice. Mix and toss until rice is heated through and coated in kimchi. Remove from heat and set aside to cool slightly.
Make the spicy mayo: Combine Lady’s Choice Real Mayonnaise and hot sauce in a small bowl.
Assemble the musubi: Line a clean, empty Spam can with plastic wrap.
Divide the rice into 6 portions. Scoop one portion into the Spam can, packing it down gently.
Spread a spoonful of spicy mayo on top of the rice. Add a slice of Spam on top and press down firmly.
Gather the ends of the plastic wrap and pull the musubi off the can. Peel the plastic off. Wrap musubi in a cut sheet of nori with the seam side down.
Continue until all rice and Spam have been used.
