The viral banana pudding matcha, but make it a float, built just like your favorite mango float.
Banana pudding matcha is all over our feeds right now, and honestly, we get it. Banana and matcha just work together. The sweetness of the banana takes the edge off the matcha, and the pudding makes the whole thing taste like dessert. But trying to sip a latte with a big scoop of pudding and wafers sitting on top is kind of a mess. You end up with cream on your face and half the pudding left at the top of the cup.
So we turned it into a float instead. It's the same idea as the mango float you've probably made a hundred times, just with matcha in the cream and bananas in place of mango. Graham crackers stand in for the vanilla wafers, and after a few hours in the fridge they soak up the cream and go soft, almost like cake. You get everything you like about the drink, and you get to eat it with a spoon.

Go easy on the matcha if you're not a big fan of the bitterness, or add more if you like it strong. Just taste the cream before you start layering. Save a couple of bananas for the top and slice them right before serving so they stay fresh.
