Ate Rica's Bacsilog is famous for their signature bacsilog: bacon, egg, and sinangag (garlic rice) topped with a creamy cheese sauce. Think bechamel with a Filipino flair of processed cheese, a slight salty kick, and a creamy finish to top a rice bowl of bacon, egg, and garlic rice. This sando takes that same sauce, thickens it into a spread, and swaps the garlic fried rice for garlic-butter-toasted milk bread. Same flavors, different form.
Thick-cut bacon gives you something to bite into against the soft bread and creamy spread. The cheese sauce clings to the bread and holds everything in place. The egg adds richness that cuts through the bacon's salt, all wrapped in garlicky toasted bread. Make sure to mince the garlic as finely as you can to prevent uneven cooking.
1 tbsp all purpose flour
1 tbsp butter
1 small can evaporated milk
½ cup processed cheese
1 tbsp liquid seasoning
Make the sauce: Heat butter over medium low heat until it is melted. Add flour and mix thoroughly until well combined. Cook for 1-2 minutes or until the flour has fully absorbed the butter. Gradually add the evaporated milk and mix until smooth and no lumps remain.
Fry bacon: Start with a cold pan and add your bacon strips. Add 2 tbsp of water and turn the heat up to medium heat. Cook until the water evaporates and the bacon is rendered. Cook for 8-10 minutes until the edges are crispy.
Brush bread with garlic-butter: Mix the melted butter and minced garlic in a small bowl. Use a brush and lightly coat both sides of the bread with the mixture.
Toast bread: Put bread in the middle rack of your toaster and toast for 2-3 minutes or until light golden brown.
Assemble: Spread the cheese sauce onto the 2 pieces of bread. Put the first piece of bread, cheese-side up onto a plate and layer the bacon first, then top it off with the egg, and then sandwich with the second piece of bread. Cut down the middle or diagonally.
