Live Your Dirty Ice Cream Dreams with This No-Churn Ube Ice Cream Sandwich

It’s our birthday! To celebrate, we’ve rounded up the team’s favorite childhood birthday food, and updated them to 2020; and we’re sharing them to you throughout the month.

Our writer Jica loves dirty ice cream; so much so that on her 7th birthday, her parents got her an entire vat—as in the whole container you’d usually see peddled on the streets—or her party. So for her recipe, we’ve developed a no-churn ice cream, with two of the usual dirty ice cream flavors: ube and cheese.

It’s your churn!

The ice cream-making requires little to no effort, given you have a stand mixer. But we’re not doing two different batches of ice cream. We’re only doing ube. The cheese here comes from the cheese bread, in which we sandwich the ice cream into later. It’s putting another tradition into the recipe. Plus, it’s also another treat for Jica, who also loves bread.

  1. In the bowl of a stand mixer, whip cream to stiff peaks.
  2. Fold in condensed milk and ube extract until no streaks remain.
  3. Transfer the mixture to freezer safe containers and freeze overnight.
  4. Serve ice cream in between pieces of cheese bread.
