Mary Grace’s Summer Squash Hearty Soup Is Better Enjoyed on a Rainy Day

The rain’s been pouring lately, and while we’d rather hide in our thick blankets forever, we wouldn’t mind getting up for some hot soup. We have to say, it’d be ideal to have something made by a parent to get that peak comfort feeling. But when we’re craving home-cooked, feels-like-mom’s-hug food, Mary Grace‘s menu cuts it darn close.

No one’s going out in this weather, so we hacked Mary Grace’s Summer (ironic, we know) Squash Hearty Soup so you can have your own bowl at home. It may come a tad sour, so just add cream to balance it out based on your preference. The best part about this recipe is that it’s heavy enough to keep your full for a while, giving you an excuse to stay in bed the rest of the day. You’re welcome.

Mary Grace Summer Squash Hearty Soup

  • Serves: 4 people
  • Active time: 45 mins
  • Total time: 45 mins
  • Difficulty: Easy

INGREDIENTS

Soup

  • 6 cups squash, peeled and cubed
  • 2 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper, to taste

Topping

  • Dried parsley, for garnish
  • 2 tbsp. cream

INSTRUCTIONS

  1. Place squash in a pot and cover with water.
  2. Place pot over medium heat and cook until squash is extremely tender, 10-15 minutes.
  3. Drain water then place back into pot.
  4. Add chicken stock then blend using a stick blender (alternatively, ingredients can be placed in a stand blender) until smooth.
  5. Blend in cream, then place soup back on the heat until warmed through.
  6. Season with salt and pepper, then serve with dried parsley and a drizzle of heavy cream.
