Making Pappardelle Aglio E Olio with Massimo Veronesi of Va Bene Pasta Deli

One of the OG Italian restaurants in the Philippines is Va Bene Pasta Deli, starting out as a small and unassuming restaurant in an unlikely location: the Petron gas station along EDSA in Makati. The site has since become a mini food spot, with a Hong Kong-style roast opening up in the same complex, but it was indeed Va Bene that first brought the idea of high-brow food to the specific location, and became known for it.

Run by married couple the Massimo and Carolyn Veronesi, the Pasta Deli is known for their authentic pastas that are made fresh daily. Chef Massimo Veronesi talks about how growing up in Italy fostered his love and appreciation for fresh pasta, and shows us how it’s done in the Va Bene kitchen with a fan-favorite: the Pappardelle Aglio E Olio.
