After 300 years worth of shared histories and gastronomic influence, it was about time that Spanish and Filipino culinary masters should meet in one of the most significant flavor festivals to sweep Asia: Madrid Fusiòn Manila. Last April, some of Asia’s and Spain’s top chefs and food aficionados gathered for a series of talks, pop-up dinners, and exhibits. Talents and experts the likes of Andoni Luis Aduriz of Mugaritz, Singapore’s André Chiang, and the country’s own Margarita Forés filled the room.
