Sprinkled with Fairy Dust: Vanilla Popcorn

Last November, we chose Perry and Ria Jocson’s Vanilla-Margherita pizza creation for our Pizza Week, and they were very happy about it. The couple also happens to be the owners of The Vanilla Company, and they sent over loads of premium vanillas to the studio all the way from their Vanillary in Tagaytay.

And now that we have a surplus of vanillas, we thought of whipping up a number of yummy vanilla-infused stuff. Aside from using them for our Christmas Cocktail Series, we also conjured a snack that’ll bring back the wide-eyed child in all of us: Vanilla Popcorn with Cinnamon Sugar.

The distinct aroma of fresh vanilla swirling inside your nostrils is such an enchanting experience. The corn kernels popping with that Bourbon vanilla bean will dig through your memories and give you an idea of what the wicked witch’s candy-studded house in Hansel and Gretel smelled like.

As a kid, popcorn reminded me of circuses, trampolines, acrobats, and elephants. But as I eased into my teenage years (and adulthood), it represented gimmicks, dates, and everything in between. When it comes to popcorn, I always order the sour cream variety with two extra shots of butter, but after tasting this vanilla one, my heart is now conflicted between my two loves! This has instantly become a favorite snack of mine (whether in the movies or at home), and I’m sure it will be yours too.

Vanilla Popcorn with Cinnamon Sugar

Total Time: 15 minutes / Yield: 3-4 servings


  • 1/3 cup corn oil
  • 2/3 cup corn kernels
  • 1 pc Bourbon Vanilla Bean (from the Vanilla Company), split in half
  • 2-3 tbsp sugar
  • 1/4 tsp cinnamon


  1. Mix together sugar & cinnamon  set aside.
  2. Heat oil in pan for 2 minutes.
  3. Put one piece of corn kernel. Wait until it pops.
  4. When it pops, add the vanilla bean, and other corn kernels.
  5. Cover and wait for the kernels to pop.
  6. While waiting, gently swirl the pan.
  7. Transfer to a bowl.
  8. Sprinkle with sugar mix and serve.
