Level up Your Next Noodle Meal with This Manam Crispy Pancit Palabok Hack

Let’s be real, seeing that mountain of crispy noodles slowly collapse from the lava-like pouring of rich, orange shrimp sauce—that’s the true reason we order Manam‘s Crispy Pancit Palabok (and okay, it tastes pretty great, too). We hacked the all-day pancit dish so you can replay the satisfying sight again and again. At least, until you run out of the stuff.

The sauce has to be hot when you pour it, or else the noodles won’t melt into it’s true palabok form.

The sauce packs a strong shrimp-y flavor, but the mix of noodles, seafood, and chicharon cuts through it well enough to give a balanced bite each time. We recommend using spicy chicharon for this recipe to add some heat.

Manam’s Crispy Pancit Palabok

  • Serves: 4 people

INGREDIENTS

Palabok Sauce

  • 3 tbsp. oil
  • 1 tbsp. annatto powder
  • ¼ cup all-purpose flour
  • 2 cups pork broth
  • 2 cups shrimp broth
  • ½ tbsp.. fish sauce
  • 1 tbsp. spring onion, chopped
  • ½ cup chicharon, crushed
  • Salt and pepper, to taste

Crispy Pancit

  • 2 cups dried vermicelli noodles
  • Oil, for frying

Seafood

  • 1 tbsp. oil
  • 3 ea. medium squid, cut into rings
  • 6 ea. medium shrimp, tail-on
  • Salt and pepper, to taste

Toppings

  • ½ cup chicharon, slightly crushed
  • 2 eggs, hardboiled and halved
  • 4 ea. calamansi, halved
  • 2 tbsp. spring onion, chopped

INSTRUCTIONS

  1. For the sauce, add the oil and annatto powder in a pot over medium heat.
  2. Once oil is colored, add flour, stirring constantly to prevent lumps.
  3. Cook flour for 3-5 minutes, then pour in pork and shrimp broth while stirring.
  4. Let sauce cook and thicken, about 8 minutes, then add fish sauce and spring onion and season with salt and pepper.
  5. Stir in seasonings then remove sauce from heat.
  6. Add crushed chicharon and mix through, then set sauce aside.
  7. In a separate pan, heat oil.
  8. Once hot, add shrimp and squid, seasoning with salt and pepper and cooking until just cooked through, about 8-10 minutes.
  9. Remove from heat and set aside.
  10. In a large pot, heat frying oil.
  11. Add rice noodles in two batches, frying until puffed and crispy, about 1 minute.
  12. Set aside to drain on a paper towel.
  13. To assemble, pile crispy noodles in the center of a large bowl.
  14. Arrange seafood, chicharon, egg, and calamansi around the noodles and top noodles with spring onion.
  15. Reheat the sauce until extremely hot, then serve on the side.
