We Made Coconut Scramble to Kick off the Summer—and We Put It in an Actual Coconut

A hot day is easily remedied with something cold. And as a tropical country, the Philippines has a range of iced desserts/snacks. Halo-halo and mais con hielo are the usual picks. But we’ll bet everyone’s childhood summers were also riddled with iskrambol.

Let’s get ready to iskramboool!!!

Think of this recipe as an upgraded iskrambol (or “ice scramble) or a coconut milkshake with the works. Our version marries it with another summer-y favorite: coconut. Of course, the flakes and mini marshmallows are optional. Go wild; top it with whatever you want. (Yes, that includes powdered milk.) But the coconut halves as vessels are non-negotiable.

  1. Whisk together coconut cream, condensed milk, and powdered milk.
  2. Working quickly, add in crushed ice and mix thoroughly.
  3. Divide the scramble between the two coconut halves.
  4. Top with flaked or desiccated coconut and mini marshmallows.​
