Breakfast muffins, an overlooked and under-appreciated baked good, are usually very simple in flavor, so that they can accompany and not overwhelm a steaming cup of coffee. When developing this recipe, we instead combined the flavors you’d usually find in the morning, for a caffeine-loaded treat.
This incredibly foolproof recipe is not intimidating at all, and mostly comes together in one bowl. The only extra step in the batter is microwaving together instant coffee and NESTLÉ All Purpose Cream, so that instead of getting an incredibly potent kick, you get creaminess that makes these muffins taste like a cappuccino. We’ve incorporated NESTLÉ All Purpose Cream into the glaze too, so you get a thin, ice-like consistency that tops the pastries, and adds even more creamy coffee flavor.
