Beet and Carrot Smoothie

Have you ever tried a vegetable smoothie? Many nutritionists wholeheartedly promote the importance of eating a lot of colorful fruits and vegetables. Carrots contain carotenoids which convert into vitamin A, while deep red beets have betalains. These compounds help protect the health of your eyes and can inhibit cell growth in tumors. Healthy and delicious, this smoothie delivers on both counts.

The carrot complements the well-balanced, earthy sweetness of the beet. In addition to these two, leafy greens add a vegetal flavor, and a welcome bitterness to temper the overt sweetness of the apple juice. Try this easy smoothie that you can prepare in a few short minutes—you’ll find that it isn’t short on flavor at all.


Beet and Carrot Smoothie

Yield: 2 servings
Time: 5 minutes


  • ½ cup beets, peeled and roughly cubed
  • ½ cup carrots, peeled and roughly cubed
  • ½ cup romaine or any leafy green, roughly chopped
  • ¾ cup apple juice
  • ¾ cup crushed ice


Blend all the ingredients until smooth. Pour into glasses and serve immediately.
