Back-to-Basics Fried Chicken That Purists Will Love at Mimi & Bros.

Mimi & Bros. is a comfort food restaurant that just opened up in the restaurant complex across Home Depot in BGC, occupying a prime corner location on the ground floor. During the day, the restaurant is cozy and comfortable, with its brightly colored interiors make you feel light and easy. But in the evening, the space transforms, with its glass doors opening up to stretch its tables and chairs to the outside for an al-fresco dining experience that, frankly, we find to be conducive for after-work drinks.

Ribs for days?

The restaurant’s menu (designed by Chef Ed Bugia) is filled with comfort classics, but with their own signatures added to it to make each dish unique. Yet out favorite dish from the lot is one that stands out for its simple yet powerful flavors that you could leave the sauce behind:

While fried chicken may be one of the most ubiquitous restaurant staples in Manila, from fast food to fancy joints, and has been done a million and one ways, Mimi & Bros. still manages to surprise us with their take. Striking in its simplicity, their chicken is incredibly juicy that you’ll need to keep table napkins on hand (or savor that flavor and just lick your fingers; we do). The meat is flavorful enough that you can skip the gravy, and the skin holds a noisy crunch.


Chicken Parmesan or Chicken Pizza?

But if you want to get one of those classics with a twist, we recommend the chicken pizza—something that chicken parm fans would get a kick out of. Sliced into easy-to-grab slices, you could consume these just like you would a pizza: with your hands. And just like if it were a regular pizza, you could probably annihilate the whole thing in one sitting.
