After Almost 70 Years, the Original Savory Restaurant Still Wins in the Fried Chicken Game

Binondo is the oldest Chinatown in the world. Filipinos have enjoyed the restaurants along its streets generation after generation. The Original Savory Restaurant is undoubtedly one of the most iconic ones. The place was opened in 1950 by the Ting brothers; and they initially specialized in lomi. But after expanding its menu, their crispy fried chicken and gravy became their new signature dish.

We asked—it’s “sah-vory,” not “say-vory.”

We sat down with Rolando Chiang, a third-generation owner, to learn more about their history, and how they make their Original Savory Fried Chicken.

They control the quality of their chicken by preparing everything in a commissary. Each bird is cleaned, marinated, and steamed before it’s sent out to different branches each day. Once an order is placed, it’s only then that the chicken is deep-fried. So it comes out with a thin, crispy skin and tender, flavorful meat.
