Papaya Mango Jam: Who Else Wants an Amazing Morning?

What would life be without breakfast?

Imagine having to go through an entire mundane morning of repetitive and derogatory work on an empty stomach versus a similar mundane morning of staring at your computer, refreshing Facebook, or—dear Lord help you—playing Solitaire with a couple of slices of toast, ham, and eggs satiating your belly.

Do remember that the only break you have is for lunch, and then it is back to the grinder. (And don’t even start with “I’m good with my Lucky Me instant noodles.”)

How are you supposed to concentrate on an empty stomach? How are you supposed to perform your tasks well with your tummy crying out for attention and TLC? How are you supposed to talk to your superiors well with that embarrassing rumbling going on in your gut? How are you supposed to function correctly without nourishment?! (Yes, we have clearly gone all Crazy Mother on you.)

Breakfast! That is the answer.

Toast, ham, and eggs wouldn’t be complete without something simple and sweet, however. And this is why we’re bringing you Papaya Mango Jam—a recipe for jam that is so simple, you can’t possibly get wrong, which is how you should start every day: Perfectly. (Pressure much? Yes. Accept this challenge!)

You don’t even have to copy the photos and use fancy bread. You could just use regular pan de sal, bagels, or Tasty bread. The important thing is that the winning combination will always be (any kind of) bread + jam = amazing.

Now go. Make yourself an amazing morning!

Papaya Mango Jam
Yield: 2 cups of Jam

Ingredients

  • 2 cups Papaya
  • 2 cups Mango
  • 2 cups Sugar
  • 2-3 tablespoons Calamansi juice, depending on taste

Procedure

  1. Combine papaya, mango, sugar, and 1 tablespoon calamansi juice in a saucepan.
  2.  Bring to boil over medium heat.
  3. Lower heat and let it simmer uncovered for 40-50 minutes until most liquid has evaporated and the desired consistency is reached, stirring often.
  4. Add the remaining calamansi juice near the end of cooking.
  5. Let it cool a bit then transfer to canning jars or desired container.
