Roast Chicken with Milk & Lemons: Take a Break from Gravy

Here’s a not-so-common comfort dish that you can quickly prepare to wow the hell out of your family and friends.

If you notice, the picture above looks really good. You know why? Because it is.

Now try cooking it—it’ll only take a few minutes; but you’ll enjoy years of praise from your friends who will never realize how easy this was to create.

Roast Chicken with Milk and Lemons

Yield: 1 whole chicken

Ingredients

  • 1 Whole chicken, halved
  • 1 tbsp Rock salt salt
  • 1/4 tsp Pepper
  • 1 cup Milk
  • 1-2 pcs Lemon, sliced in half
  • 2 tbsp Butter

Procedure

  1. Preheat oven to 350 degrees F.
  2. While waiting, clean and pat dry chicken.
  3. Season with salt and pepper.
  4. Put chicken in a baking dish skin side up.
  5. Pour milk and squeeze lemon juice all over the chicken.
  6. Scatter dabs of butter all over chicken and bake for 30 minutes.
  7. Baste with natural juice (the sauce from the pan itself) and bake for another 20-30 minutes.

Notes

  1. Feel free to add herbs for flavor. This recipe makes a very moist and juicy chicken that can be perfectly paired with some creamy mashed potatoes.

      Hi Wence! The acidity from the lemon actually curdles the milk and gives this dish that chunky looking sauce which is so good to eat with the moist and tender chicken. :) try it and let us know what you think.

    This is great! I find that oven baking the chicken allows it to retain its juices and it becomes really soft and peel-off the bone sarap! I do this regularly at home, but with mixed veggies and lots of olive oil. I stuff the chicken with lemon too! I will try it with milk tomorrow!

    I have a similar roast chicken recipe I make every so often with olive oil, garlic, white wine and lemons. So I definitely had to try this version tonight. 

    I threw in some cloves of garlic and rosemary. It was quite tasty. Thank you for sharing!

    You can’t ever go wrong with roast chicken; it’s one of my go-to meals that requires very little work.  I’ve never tried using milk, though, but it sounds great. Sounds like a great bonus to get a lemony cream sauce along with that perfectly moist chicken!

    I’ve wanted to try this for a long time (I stalk your blog on a regular basis). A while ago  I found some  chicken thighs in the fridge but no lemon :( So I made do with milk, calamansi, olive oil, butter and some of my favorite roast chicken herbs. Woot. Super super awesome. Mommy loved it.  I love your blog so so much!

    Tried the recipe over the weekend. It was great :D ! I tweaked it a bit by rubbing some fresh oregano all over the chicken, and tucked in some more fresh oregano underneath it. Flavor was good, and the zest of the lemon gives a somewhat “healthier” taste in the chicken :P

    I bet it will work great with some rosemary, too! I just need to go look for a rosemary plant. Fresh rosemary can’t be beat (except by mint, since mint is for mojitos, which is better :P)

    will definitely try this! btw have you guys tried the dari cream herb and garlic butter and the bacon one? (yes, bacon!!).

    will follow the recipe but use the herb and garlic butter for added flavor! :D btw, masarap rin ilagay sa mainit na kanin yung chicken “drippings”/sauce LOL!
