Adobo Lettuce Cups: Ever Tried using Mayonnaise with your Scrap Adobo?

Taking inspiration from Peking Duck scraps, this entry uses old pork adobo, which is neatly placed above some fried noodles and lettuce. To add a bit of flair, Adobo Mayonnaise, a smoothly-textured, slightly sweet and sour sauce instantly twists this mundane dish into a serious snack.

If you have some old adobo lurking in your fridge, it just might be the perfect time to give this a go.

Pulled Pork in Lettuce Cups with Adobo Mayonnaise
Yield: 4 servings

Ingredients

Pork Adobo

Adobo Dressing

  • 2-3 tbsp Adobo sauce
  • 1/4 cup Mayonnaise

Procedure for Adobo Dressing

  1. Whisk together adobo sauce and mayonnaise.
  2. Set aside until ready to use.

Procedure for Fried Bihon

  1. Heat oil on medium flame.
  2. Fry raw bihon in small batches until crispy.
  3. Drain and put in air tight container until ready to use.

Procedure for Assembly

  1. Lay down lettuce leaves on plate.
  2. Place crispy bihon on top of lettuce leaves.
  3. Top with shredded adobo.
  4. Drizzle with adobo dressing.
  5. Serve immediately.
 

Note

The fried bihon can also be used for other Salad recipes for an added crunch.

    I always say, never refuse leftover adobo…you can truly do so much with it!  I love the idea of making an adobo sauce with mayo…I’m a big fan of mayo even if it isn’t the healthiest thing around ;)
