Food Hack: Chili’s Mashed Potato & White Gravy

Have you heard of Los del Rio?

Like you, we haven’t, until today.

Apparently, these guys made the 90′s most overused (not to mention annoying) song and butt-shaking dance, the Macarena. Unfortunately for them, one-hit wonders are forgettable.

Most of the time, consistently good performers trump lucky breaks. In food, that’s also the case.

In Manila, Chili’s is as consistent as it gets with American comfort food. And among the choices they have in their menu, we’d say the most iconic one is their mashed potato and white gravy. While they’re not really the best mashed potatoes, they’re the most consistent.

Today, we tried to hack this classic dish and give you the recipe. Although it wasn’t 100% accurate when we tested it, it’s pretty close.

Chili's Mashed Potato with White Gravy
Yield: 4-6 servings

Ingredients

Mashed Potato

  • 3 large potatoes
  • 1/4 cup Butter
  • 1/2 – 3/4 cup Milk
  • 1 tsp Salt
  • 1/4 Pepper

White Gravy

  • 2 tbsp Butter
  • 2 tbsp Flour
  • 3/4 cup Fresh milk
  • 3/4 cup Water
  • 1/3 pc Knorr chicken bouillion
  • 1/8 tsp Pepper
  • 1/8 tsp Cayenne pepper

Procedure for Mashed Potato

  1. Clean potatoes with skin very well.
  2. Boil potatoes until soft, about 20-30 minutes.
  3. Mash in a bowl with the skin.
  4. Mash in butter while potato is still hot.
  5. Add milk and mix well.
  6. Season with salt and pepper.

Procedure for White Gravy

  1. Mix together milk and water in a pitcher.
  2. Heat butter in pan, add flour and cook for 1 minute or until it sizzles.
  3. Slowly add in the milk-water mixture while whisking continuously.
  4. Season with chicken bouillion, pepper and cayenne pepper.

Procedure for Serving

  1. Scoop mashed potato on a plate, top with gravy.
  2. Sprinkle with a pinch of cayenne pepper.

    Use cream instead of milk and add a pinch of nutmeg for better mash :)

      Hi Stephen! Agree. I also personally use cream and add nutmeg since they go well together. But in this recipe, we tried to hack Chili’s so opted for a lighter version. :)

    When I worked there in the 90s, the potatoes were baked instead of boiled before they were mashed.  It’s still my favorite thing on their menu

    Made this for dinner, felt like I was really eating chili’s mashed potato. Medyo di lang white ang gravy coz I sort of burnt the roux, but it was still good
