February Food News: MSG Declared a SuperSalt and Noma takes on a Surprising New PartnerMarch 2, 2017
2 months into 2017 and the month has not been a bad one for the food industry (though the same can’t be said for underprivileged children in our country), from the vindication of MSG to Noma’s surprising announcement. Now that we’re well into a new month, saying goodbye to the our cool nights and hello to Lent season, let’s reminisce on the good tidings that February 2017 brought us.
Gallery Vask’s Chef José Luis ‘Chele’ González is celebrated for his storytelling approach to cuisine, taking those who visit Vask on a gastronomic journey through the Philippines via his Modern Spanish Cuisine with a Filipino twist that utilizes local Filipino ingredients. His unique style of storytelling garnered his restaurant the 35th spot on Asia’s Best Restaurants, 4 spots higher from last year.
Vegans rejoice! It’s only been a year since Ben and Jerry’s released their line of Vegan Ice Cream that consisted of Chocolate Fudge Brownie, Chunky Monkey, Coffee Caramel Fudge, and P.B. & Cookie. Expanding their range of Vegan Ice Cream to accommodate classic flavors: Cherry Garcia, Coconut Seven Layer Bar, and even adding a new flavor into their arsenal called Caramel Almond Brittle. This line utilizes Coconut Oil and Almond Milk in place of Milk and Eggs to achieve the creamy texture that’s strictly Ben and Jerry’s.
Jollibee pulled at our heartstrings with their latest series of commercials, each commercial with its own tale about love that’s inspired by a true story, our favorite being “Vow” because we’re pretty sure that love sounds like “2 piece spicy chicken with extra rice, upgrade pineapple juice.” If you haven’t watched it yet, prepare yourself for a rollercoaster of emotions and keep a phone on-hand to order yourself a bucket of Chicken Joy, preferably thigh part only.
MSG has long been known as a villain in the food world, but what if we told you that it isn’t so bad after all? MSG is an ingredient in food scientist’s Steve Witherly’s supersalt, which consists of nine parts Salt, one part MSG, a bit of disodium insonate and disodium guanylate. He says that it’s actually better because it reduces the amount of fat you use and enhances the flavor of healthy food, making you want to eat more of it—just in time for Lent. Pass the supersalt, please?
Ali Sonko’s been a dishwasher for Noma since it started (13 years to be exact) but now, he just got promoted to partner. A decision that took the food industry by surprise, the addition of Sonko to Noma’s partner is said to revolutionize the way restaurants build and retain their kitchen teams. Noma has definitely started a movement that will echo for the years to come that putting your heart and soul into your work will always be rewarded.
If you’ve seen Kingsman then you probably already know that manners do indeed matter, more precisely, manners maketh man. An Italian Wine Bar in Padua treats parents with a 5% discount for children with good manners, leaving children happy and parents happier—but perhaps non-parents the happiest.
Burger King’s parent company has recently announced that it will be buying Popeyes’ for $ 1.8 Billion, this’ll be a done deal by April this year. The company stated that they bought Popeyes’ for its expansion potential. When this deal come through it’ll mean that Popeyes’ is now also related to Pizza Hut, Taco Bell, and KFC. We would love to be around for their family holidays!
BluGré Coffee hails from Davao City, and is the brainchild of Gatchi and Larcy Gatchailan. This coffee shop serves Durian Coffee (which uses the pulp of the durian fruit) and capitalizes on the fruit in a variety of its items. They’ve opened its first branch in Manila at the Malacañang Compound and are set on opening more branches in Makati and BGC.
