We Collaborated With Some of Our Favorite Restaurants for These Exclusive Dishes

Since it’s our 6th birthday, we wanted to find a way to reach out to you, our readers, in a way that lets you explore our tastes and understand the food that we love. So this year, we worked with some of our six favorite restaurants on six dishes that are a true collaboration between our tastes and their style.

DIRTY WHITE MOCHA- EACH

Exchange Alley Coffee House shows us a different way to enjoy our coffee with the Dirty White Mocha. Enriching their stellar espresso base is caramelized white chocolate: white chocolate (the real-deal stuff) from local bean-to-bar players Risa, cooked down slowly over low heat to caramelize both the sugars and the milk solids. Think dulce de leche with its notes of slightly burnt sugar and nuttiness of cooked milk, but with the added browned butter-like richness from the cocoa butter that well stands up to the depth of the espresso.

UNI PURI- LITTLE BEAR

Since our first visit two years ago, Little Bear Diner has remained one of our favorite little spots in Manila. Behind it is a duo who are obsessed creating dishes that are as much about attention to detail as they are about flavor. Recently, Little Bear has branched out to include Indian food that is both authentic and adventurous, so collaboration on a dish with these leanings was unavoidable. This Uni Puri is pretty much a gateway drug to Indian cuisine, and describes exactly where Little Bear is heading. Tiny, crispy, hollow puri pockets are filled with a layer of masala chickpea mash, soft caramelized onions, traditional pani (basically a sweet and spicy water) then topped off with briny lobes of uni. All the flavors sound like a mouthful, but instead, they work together to make a soft but crunchy, sweet but salty bite.

CALAMARI FRITO TACO- LAGRIMA

Lagrima earned the top spot in our Pepper Power Rankings’ Underrated category, just because we became severely addicted to their tostadas and horchata. This special is precisely what we love about the place–traditional, but unafraid to color outside the lines. The squid is coated in a crisp, airy beer batter that keeps the texture of the squid intact. Underneath are leeks, slightly fried to bring out their sweet onion flavor. The whole thing is tied together with a red piri-piri-style sauce, that is more concentrated in spice. Pickled cucumbers provide balance to the fat and heat, creating a taco that only Lagrima could make.

CHICKEN PARM SANDWICH- BUCKY’S

Bucky’s is our go-to merienda spot in the Poblacion area where we can get a hit of those good delicious chicken sandwiches that we wrote about last year, available only as an afternoon merienda exclusive. It only makes sense that for our anniversary, they took our favorite dish, mashed it together with one of their classic dinners (the Chicken Parm), and offered it up on bread for a hot, crispy, heavy, messy, gooey mess. Served with a side of our favorite kind of fries, the Chicken Parm Sandwich is available not just in the afternoon but all day long—for only a month after our birthday.

DULCE DE LECHE TORTE AFFOGATO- SEBASTIAN’S

Savor the no-fail trio of chocolate, coffee, and caramelized milk in a summer-appropriate form with Sebastian’s Dulce de Leche Torte Affogato. This special take on affogato swaps out the usual vanilla gelato for Sebastian’s Dulce de Leche Torte ice cream—an especially indulgent scoop with a dark chocolate base spiked with chocolate cake chunks and a fudgy, gooey dulce de leche ripple. Hot coffee is poured on top, bolstering the chocolate’s bitterness and melting the ice cream and whipped cream topping just slightly to form a creamy, foamy puddle surrounding each scoop. Scarf it down solo or share with a friend; either way, be sure to dig in right upon serving to get the best contrast of temperatures and textures.

SANSHO PEPPER SOUR- Kampai

Japanese-themed cocktail bar Kampai hits us with a dry and subtle blend of gin and suntory whiskey, frothed up with some egg whites, and punctuated with sansho (also known as Japanese Pepper, a nod to us on our anniversary) which gives it a citric and fruity punch. The purple cocktail has a splash of grape liqueur that allows us to regard the drink as a mature version of the grape juice boxes we’d devour over recess. The candy-like flavor will have you licking your lips, and the mix of alcohols will have you acting will have you acting like a kid again.
